It sure would be nice to see all the temps graphed. Anybody attached sensors to their PC or is this just a geek thing I have? My PC could announce the temps, warn when they hit the finish temps, etc.

I have read posts that say lump charcoal is the best way to get a smoke ring and others that say the Kingsford briquettes are the best to use. I was wondering if anybody has used both and knows which produces the best smoke ring? I am hoping the lump charcoal produces the best smoke ring since it doesn't have the fillers that the briquettes have, but maybe it is the fillers that cause the smoke ring? Also, how much charcoal do you add to wood box and if you add charcoal do you need to reduce...

Hi all- This post is slightly off topic, but in the many posts I see degrees posted as 225F, or 225*. Most computers will allow you to put in a degree symbol, as in, 225º, by holding down the alt key and typing 0186. The only reason I'm posting this is that it took me a while to figure it out, and though it might be helpful. If this is too off-topic, my feelings won't be hurt if it gets deleted!

Has any of you Cajun members ever hot smoked pork boudin in a Cookshack? I know it has a tendency to explode in boiling water and I think it would be wonderful smoked, but don't want to scrape it off the walls of my CS. Also! I'll bet our Mississippi members would know how to cook boudin in a smoker. Looking forward to having some and have a good source for the raw product on my next trip to Lafayette LA. smokemullet

I have inherited a 055 and have successfuly smoked chicken, pork ribs and ribeye roasts at almost 9000 ft above sea level. On long smokes however ie. Brisket, seems to be drying out. 10 lb. brisket at 200f 19 hrs to get to 195f, overall pretty good but a tad dry. Since water boils at 195f should I drop the cooking temp and cook longer maybe foil at 170. Any help out there would be appreciated. Expat Texan
